Serves 2-4, Takes 20 Minutes
Ingredients:
• 1 Mango
• 1 Plum/Buffalo Tomato
• 1 Red Onion
• 1 Red Chilli (amount can be changed depending on desired level of spice)
• 1 Sweet Bell Pepper
• 2tbs Olive Oil
• Salt
• Pepper
• 1 Lime
• ½ Bunch of Coriander (or parsley if you don’t like coriander)
Method:
1. Wash and finely dice your tomato then add it to a mixing bowl.
2. Cut your red onion in half and peel it.
3. Finely dice your red onion and add to the tomato.
4. Cut away the mango halves either side of the pit.
5. Use a tablespoon or a serving spoon to scoop the mango flesh away from the skin of both halves.
6. Cut the mango halves into strips, then dice the mango the same size as the tomato and add it to the bowl.
7. Wash the bell pepper and cut it into quarters around the stem so that you only leave the stem and seeds left.
8. Cut each quarter into strips and dice the bell pepper the same size as the mango and tomato adding it to the bowl.
9. Wash and finely dice the red chilli, adding it to the bowl.
10. Zest the lime into the salsa and squeeze in the juice.
11. Wash and finely chop the parsley/coriander and add it to the salsa.
12. Add the olive oil and season with salt and pepper to taste.
13. Gently mix with a tablespoon so all the ingredients are evenly distributed throughout the salsa.
14. Taste for seasoning adding more lime, salt or pepper if needed.
15. Transfer into a serving bowl and enjoy your zesty mango salsa!
