Vegan Coconut Panna Cotta

Vegan Coconut Panna Cotta

Ingredients:

• 400ml Canned Coconut Milk

• 100g Caster Sugar

• ½ tsp Vanilla Paste

• 1tsp Agar-Agar Powder

• 1 Mango

• 3tbs Water






Method:

1. Add the coconut milk, sugar, and vanilla into a saucepan.

2. In a small bowl mix the agar-agar with the water, then mix so there are no lumps.

3. Add the agar-agar to the saucepan and whisk until combined.

4. Bring the coconut milk to the boil and cook for 3-4 minutes mixing continuously.

5. Remove from the heat and pour into moulds of your choice.

6. Allow them to cool to room temperature for 1hour .

7. Place them in the fridge to chill for at least 2-3 hours (until they have set).

8. Cut the mango in half from either side of the pit.

9. Use a tablespoon to remove the flesh from the skin.

10. Slice the mango into strips, then dice into small cubes.

11. Top each vegan coconut panna cotta with the mango and some mint then enjoy!
