Fluffy Banana Muffins

Makes 6 - 9 Muffins (depending on the size), 40 Minutes



Ingredients:

  • 2 Large Ripe Bananas (or 3 medium bananas)

  • 2 Medium Eggs

  • 1 tsp Vanilla

  • 1/2 cup Caster Sugar

  • 1/2 cup Sunflower oil

  • 1 cup Self-Raising Flour

  • 1tsp Baking Powder

  • 1/2 cup Chocolate Chips (optional)

Method:

  1. Pre heat the oven to 180*c and line a muffin tray with muffin cases.

  2. Peel and mash the bananas in a mixing bowl.

  3. Add in the sugar, vanilla, oil and eggs.

  4. Whisk until fully combined.

  5. Sieve in the flour and baking powder.

  6. fold until combined.

  7. If you would like you can also fold in chocolate chips or chopped nuts.

  8. Portion the muffin mix evenly between the muffin cases.

  9. Place in the oven for 25 - 30 minutes.

  10. Check with a toothpick if it comes out clean it's done.

  11. Carefully remove from the oven and leave to cool down fully.

  12. Once cooled enjoy!
