Serves at least 8, takes 2 hours.
Baking Powder 1/2 tsp
lemons 1 (juice and zest)
Pre - heat the oven to 180*c.
Grease a 20cm cake tin and line with parchment paper.
Wash and dice your strawberries.
Place them in a bowl and add the lemon zest.
In a mixing bowl cream the butter and sugar until pale and fluffy.
Add the eggs and whisk until combined.
Sieve in the flour and baking powder then fold in until combined.
Fold in the strawberries and lemon zest.
Pour the mix into the cake tin and spread it out evenly.
Place in the oven and bake for 30 - 35 minutes (when you insert a toothpick it should come out clean).
Remove from the oven and cool completely for an hour.
Once it's cooled down sieve the icing sugar into a bowl.
Add the juice of the lemon and mix until smooth.
Add in 1tsp of water if it is too thick.
Remove the cake from the tin onto your serving plate.
Pour the glaze onto the cake and spread it out over the top so it drips down the sides.
Decorate with strawberries and anything else you would like to top it with.
Slice and enjoy!
