Takes 35 minutes, makes 9 Mixed Berry Crumble Muffins.
Ingredients:
• 100g Caster Sugar
• 100g Butter
• 2 Eggs
• 175g Self Raising Flour
• ½ tsp Baking Powder
• 70g Blackberries
• 60g Raspberries
• 40g Blueberries
• 90g Strawberries
• (A few raspberries to decorate the top of the muffins)
(For the crumble topping)
• 50g Butter
• 100g Self Raising Flour
• 75g caster Sugar
Method:
1. Pre-heat the oven to 180*c.
2. Line a cupcake tray with muffin cases.
3. Wash the berries and cut the stems off the strawberries.
4. Dice the berries and place them in a small bowl.
5. In a mixing bowl mix the butter, sugar, and vanilla until it’s pale and fluffy.
6. Crack the eggs into the mixing bowl and whisk until fully combined.
7. Sieve in the flour and baking powder into the mixing bowl.
8. Fold the flour and baking powder into the wet mix.
9. Add the chopped berries and fold until fully incorporated.
10. For the crumble topping rub the butter, flour, and sugar together with the tips of your fingers until it forms a crumble.
11. Spoon the muffin mix into the cases and sprinkle over some of the crumble topping onto each muffin.
12. Cut some raspberries in half and top the muffins with them.
13. Place the tray of muffins in the oven and bake for 25 minutes (until a toothpick/skewer comes out clean).
14. Remove the tray from the oven and allow them to cool for an hour.
15. Remove the muffins from the tray and enjoy!
