Minced Pork and Peanut Udon topped with Roasted Peanuts and Spring Onions.


Makes 1 portion, takes 25 minutes.


Minced Pork and Peanut Udon topped with Chopped Roasted Peanuts and Spring Onions.

Ingredients:

• 2 Pork Sausages ( I used Cumberland Sausages, you can also use chicken or beef sausages if you don't eat pork.)

• 1tbs Soy Sauce

• 1tbs Dark Soy Sauce

• 1tbs Peanut Butter

• 1tbs Caster Sugar

• 1tbs Sesame Oil

• ¼ cup Water

• 1 Clove of Garlic

• 1tsp Minced Ginger

• 1 Shallot

• 3 Spring Onions

• Sesame Seeds

• Roasted Peanuts

• 200g Udon Noodles (1 packet)

Method:

1. Wash and finely slice your spring onions and set to one side.

2. Mince your garlic clove, dice your shallot and set to one side.

3. Peel the skin off your sausages.

4. In a small bowl add the soy sauce, dark soy sauce, sesame oil and caster sugar.

5. Bring a frying pan to medium heat.

6. Add some sesame oil and the sausage meat.

7. Break the meat up with a spatula and sauté it until the it is caramelised and golden brown.

8. Add the garlic, ginger and diced shallot then sauté until they start to caramelise.

9. Turn the heat down to medium low heat.

10. Add 1/4 cup of water, cover with the frying pan lid and cook for 10 minutes (or until the sausage meat is fully cooked).

11. After the 10 minutes add the udon to the boiling water and boil for 3-5 minutes until the udon separate.

12. Add the sauce to the frying pan along with the peanut butter, then mix until the peanut butter has incorporated into the sauce (add extra water if the sauce is too thick).

13. Add the udon, half the spring onions and mix, adding any extra noodle water if needed so that the sauce coats the noodles evenly.

14. Add the noodles into your serving bowl topping with the chopped peanuts, extra spring onions and sesame seeds.

15. You can also top it with chilli flakes if you want an extra kick and enjoy!
